Roasted Butternut Squash, Green Beans and Spinach
Every day after work I go to the gym - pretty much to think about dinner the entire time.
I knew that we had a butternut squash to use up and I've only cooked it once before. So I was fully prepared to come home and make the worst meal of my life. I started chopping and roasting and seasoning - I took my time and considered everything available. I visualized what the perfect plate would look like. I wound up making the best meal ever!
Roasted Butternut Squash with Green Beans, Spinach and Goat Cheese
1 butternut squash
A bunch of green beans
A couple handfuls of spinach
A few macadamia nuts
2 oz. Goat Cheese
Olive Oil
Balsamic vinegar
Salt
Pepper
Nutmeg
Preheat oven to 400F.
Cut the squash lengthwise in half. Then cut halves in to .375" sections. Line a cookie sheet with parchment paper and arrange squash on pan. Drizzle with olive oil and season with salt, pepper and nutmeg. Bake in oven for 20 minutes. (During this time I took a shower and visualized the rest of the meal).
After 20 minutes turn the squash to get the other side. Squash roasts for a total of 40 minutes.
Steam your green beans (I used the microwave - 3 or 4 minutes).
Toast your macadamia nuts (I burned the first round - it only takes 1 or 2 minutes).
Put a handful of spinach in a bottom of a bowl. Top with squash, green beans and a few crumbles of goat cheese. I also included a few slivers of a fancy cheese I had in the fridge. I covered with macadamia nuts and drizzled with an olive oil/balsamic vinegar mixture.

Rats, I just threw half of a butternut squash away on one of those throw-everything-away frenzies.
I've never had green beans steamed, are they still crispy or do they turn soft? We cook a lot of green beans, I'm always looking for new methods.
My favorite way to cook them is to boil them first, while I sautee a little bit of butter, seasoning, and onion in a pan. Then I throw in the beans and sautee them all together for a few minutes. And you can change the seasoning to whatever goes with your food, but I always revert back to brown sugar on mine. I'm a Thanksgiving baby :)

You're not going to believe this but I've NEVER cooked green beans before. I was asking Jeremy "Do you think I can just steam these?" - another reason why I thought my dinner was going to turn out a disaster. How long do you boil them for? Do they stay crispy that way? I like a little bit of crunch to them.
I eat onion with EVERYTHING. I have to buy 5 a week!
Butternut squash is good roasted whole and then just add butter, sea salt and brown sugar and mash it all up! It's a lot like sweet potatoes.
