a. Every Wednesday night our nearest and dearest come over for dinner, wine and good conversation. Last night Jeremy made the most delicious batch of veggie chili chock full of onion, squash, zucchini, a variety of beans, red pepper and apple - topped with goat cheese. I whipped up a batch of homemade cornbread using this recipe.
b. I made another salad based off of this recipe. I roasted a winter squash and topped it with parmesan which created perfect parmesan crispies in the oven. We also used some Amy's Organic Goddess dressing - delish. However, I like my original attempt at this using butternut squash.
c. The sky dropped unexpected buckets of hail on us last night! They were perfectly formed little balls of ice. Crazy!
P.S. My dad thinks it's hilarious that we top EVERYTHING with goat cheese.

Yum, your veggie chili looks delicious! We didn't have hail in Tulsa, but I was loving the thunderstorm. A little weird for January, but enjoyable none the less. :)

That storm was INSANE! I don't think we got hail, but the rain was blowing in sheets sideways and lots of lightening and thunder!
my sister loves goat cheese more than anything! i can understand wanting to use it for everything.
