Butternut squash curry

I finally picked up a couple of Coney Island prints photographed by Mrs. Limestone. You can by them, as well as other beautiful photos of her adventures and travels, at a steal here.

I've become a huge fan of Molly's (from Orangette) podcast, Spilled Milk. Their first episode was about fried eggs and after that I was hooked. Their second episode was about winter squash - and since I've been trying to eat in season and local I've been eating a lot of winter squash. When they mentioned a butternut squash curry I knew I had to try it.

I used butternut squash (cubed, peeled, boiled and smashed), red peppers, onion, chick peas, coconut milk, turmeric, curry, cumin and brown sugar on a bed of rice noodles and topped with roasted pecans.
