Oatmeal Peanut Butter Bars

Last night I had a mad craving for some sushi - which is usually reserved for special occassions (or at least the weekend). So I asked Jeremy to celebrate Monday with me and go out to dinner.

But then we came home and I missed cooking. I wanted to cook up some peanut butter rice crispy treats, from The Kind Diet, but we didn't have rice crispies.

So I winged it. Let me repeat that - I WINGED IT. For the first time ever (well, second if you count the yummy bastards), I just tossed some baking ingredients together, stuck it in the oven and hoped for the best.

And it was pretty good.

Oatmeal Peanut Butter Bars
2 c. oatmeal
3/4 c. pastry flour
1/8 tsp. baking soda
1 c. maple syrup
1/4 c. honey
1 c. peanut butter
1/2 c. butter
1 egg
1/2 c. pecans chopped
1/2 c. dark chocolate chopped

Preheat the oven to 350f.

Melt the butter in a sauce pan. Mix in the oatmeal, syrup, honey and peanut butter. Meanwhile, in a large mixing bowl mix the flour and baking soda. When the oatmeal mixture is nice and gooey add it to the flour bowl. Mix together and add in the egg. When that's all mixed fold in the pecans. Let the mixture cool a little and add in the chocolate chips - they may melt a little so try to stir just enough to get them evenly distributed among the mixture.

Spread the batter into an oiled 8x8 or 9x9 pan. Bake in the oven for about 20-25 minutes. Let cool before cutting into squares.


This was the perfect dessert - but it will also make for a great snack or breakfast bar. Next time I might add a mashed banana or apple sauce for a little less crumble and a little more stickiness. EDIT: I ate my leftovers today and they were PERFECT. Tasted like no bake cookies.

I love that this recipe has 1c of maple syrup.. I put maple syrup in eeeeeeverything!! Gonna try this tonight!!

DOM - I want to replace all of the sugar in my baking with it - but boy is it an expensive substitute! I suppose it will keep me from eating too many sweets.

When I first realized I could successfully wing it in the kitchen, I had one of those little moments when I really felt like an adult!
