Pesto and Pasta: I finally got a food processor


I wasn't sold on getting a food processor. I thought maybe it was a fad cooking tool - like a panini griller. Or a practical tool, like a blender, that just never gets used - no matter how many fruit smoothies you think you'll make.
I was wrong.
Jeremy ordered me a 14 c. Cuisinart food processor (with our credit card rewards points!) and it arrived on Friday. I've used it for almost every meal since.
Pesto & Pasta
1 bunch of basil
1 bunch of fresh spinach
3/4 c. freshly grated parmesan
1 small handful pine nuts
3 cloves garlic
A few tbs. olive oil
Throw it all in the food processor and blend. Voila.
I used kamut and quinoa pasta. This was one of the quickest and tastiest meals I've had. Adding fresh diced tomatoes would've given this dish a nice color and flavor.

I use my food processor all the time. I love it! I made a meal similar to what you made but added butternut squash to it.
I want to eat it, now. Too bad I don't have a food processor. :(

I just got a food processor for Christmas! I had the same fears as you. I use mine to make homemade peanut butter and grate blocks of cheese mostly but there are tons of other uses too!
I used to feel the same way! Mine sat unused for two years before I finally realized it's worth. You will love it for things like salsa, and other sauces!
PS, if you make a huge batch of pesto, you can freeze the extras in little individual baby food jars, put them in the fridge, and then thaw them out in a cup of water (inside the jar) and use them when you need them. My freezer is full of them, I have disgusting scary amounts of basil growing in my garden every year. Do you like basil other than in pesto? I am always trying to give it away to people, because wayyyy more than I can eat grows.
Yum! That looks delish. I cheat and buy pesto from a jar. Your dinner looks much more appetizing than mine, though!
I really hate having too many appliances, and always thought the food processor was for people who are just lazy about using knives. But then I used one to make hummus (after years of mashing it by hand), and I was sold. I understand you completely :)
O&P: Melina - Yes! I kind of felt like I was getting some sort of cooking badge by cutting everything by hand but NO MORE. I'm a food processor convert.
Aura - good idea, but I always forget about my frozen food! I'm just not good with it.
We're growing basil this year so we're probably good - but I'll let you know if we're unsuccessful.
I've been lusting for one. Pesto is the exact reason, as are about a million other recipes and "experimentations" I'd like to do. Hoping to sell Neil on the idea by spring. He thinks slap chop can do it all...

My favorite food processor delight: mayonnaise. It's such a different beast than it's jarred counterpart.
