Quinoa Salad and Stuffed Medjool Dates

Sunday lunch was quinoa with garlicky kale, toasted pine nuts and dried cranberries.

I've been dying to try out these mejdool dates stuffed with goat cheese ever since Megan-Joy at Whole Family Fare posted them. They were delicious - we ate them for desert.

Must try the quinoa salad. I love quinoa and love trying new combinations for a topping.

are you guys vegetarian? where do you find your recipes?

Heeten - I am a pescatarian (I eat fish, eggs and dairy). Jeremy eats vegetarian at home but will have meat when we're eating out at restaurants.

Lately, I've been winging it when it comes to cooking - and it doesn't always turn out tasty. But I get most of my recipes from 101cookbooks.com but lately I've been inspired by Alicia Silverstone's book "The Kind Diet".

Elizabeth - Quinoa is so easy. It's a lot like cooking cous cous. You just do 1pt quinoa to 2 part water, bring to a boil, then down to a simmer (uncovered) until the water all simmers off - about 10-15 minutes. It has a delicious nutty flavor and I love the texture.
