I've been dying to try out these mejdool dates stuffed with goat cheese ever since Megan-Joy at Whole Family Fare posted them. They were delicious - we ate them for desert.

OH DAMN
THOSE DATES
They were pretty amazing. I'm definitely making them for everyone on a Wednesday night.
Must try the quinoa salad. I love quinoa and love trying new combinations for a topping.
oooh, I was JUST thinking about making stuffin dates. I'm taking this as a sign. :]
are you guys vegetarian? where do you find your recipes?
Heeten - I am a pescatarian (I eat fish, eggs and dairy). Jeremy eats vegetarian at home but will have meat when we're eating out at restaurants.
Lately, I've been winging it when it comes to cooking - and it doesn't always turn out tasty. But I get most of my recipes from 101cookbooks.com but lately I've been inspired by Alicia Silverstone's book "The Kind Diet".
dates with goat cheese. Wow they look wonderful. I've never cooked quinoa is it difficult?
Elizabeth - Quinoa is so easy. It's a lot like cooking cous cous. You just do 1pt quinoa to 2 part water, bring to a boil, then down to a simmer (uncovered) until the water all simmers off - about 10-15 minutes. It has a delicious nutty flavor and I love the texture.
