Almost Cheeseless Pasta Casserole

About that anxiety. It's still there. A constant buzz making it's home in the pit of my tummy. Cooking seems to calm me down. The chopping, boiling, mixing - it brings me back to the moment.

It was cold and rainy this weekend - and I refuse to turn the heat back on so bringing the oven to 400F was certainly welcome. We made cookies and this almost cheeseless casserole from 101 Cookbooks. I'm loving how many more local ingredients we're using now that the farmer's market is back in full swing. This casserole has local yogurt, spinach, eggs, mint and pecans in it.

Not gonna lie- I... don't know if I want to try this.

It's just... why would you make a POINT to AVOID cheese?

I will understand if I am disinvited from Wednesday nights.

The point, really, was to use up my butternut squash and I had no cheese in my fridge. So the fact that I could STILL make a casserole out of it got me all hot and bothered. I won't make it for Wednesday night. It was delish, though.

This is where we get our plants. You are welcome to go with us, but I think they sell at the OKC farmers market you already go to...

Kevin - Thanks. We saw that they had a ton of plants at the farmers market this last weekend - so we'll probably just pick some up there. Though, we are getting a lot of sprouts in the garden right now.
