Megan-Joy's Thumbprints


About a month ago I had Megan-Joy, a fellow blogger (who I didn't know in real life), over for dinner. A food blogger, no less! I was nervous and intimidated but once her family arrived we became fast friends.
Prior to our dinner date we exchanged this IM:
Megan-Joy: So, I'm going to bring thumbprints! Do you think 8 is enough?
Kathleen: Like... 8 dozen?
Megan-Joy: ... no, just 8 cookies.
Kathleen: Um. I can dominate 8 cookies in about 2 seconds flat.
When Megan-Joy arrived with the cookies I tried to be discreet about chowing down on them, but I couldn't. They were just too amazing. She gave me the recipe and gave me permission to share it with you.
Megan-Joy's Thumbprints
1 cup pecans
1 cup rolled oats
1 cup whole wheat pastry flour
1/2 tsp sea salt
1/2 cup unsalted butter, softened
1/2 cup pure maple syrup
fruit sweetened jam, for tops
In a food processor, grind pecans and oats until fine, about two minutes. Remove and combine with pastry flour and sea salt. Cut in the softened butter. Pour in maple syrup and mix well. Refrigerate dough for 1 hour. Preheat oven to 350f. Line a baking sheet with parchment paper. Shape dough into walnut sized balls and place on baking sheet. Using your thumb, press a small indentation into the dough. Fill with a little bit of the jam. Bake for 20-25 minutes. Yields about 20 little cookies.






I have a very similar recipe that I use. The cookies are always a hit.
