Coconut curried lentils


A few things about this meal:
1) Curry is my go-to quick meal. Or if I have a bunch of veggies to use up I'll just throw them all in a curry. Depending on the spices I use the curry will skew either Indian or Thai. I like both equally.
2) I've always hated carrots - something about chewing them down raw and memories of overcooked carrots as a kid makes me gag. But as I've grown older and have developed a palate I've found that I love root veggies - so I decided to give carrots another chance. I'm glad I did.
3) Jeremy's been craving lentils since we got back from Nepal. He's been begging me to make Dal Bhat, a traditional Nepalese lentil and rice dish but I haven't had a taste for the stuff since I got sick on our second day of trekking.
4) I've been slowly reducing the loads of dairy that accompanies most of our meals - I've found the best way to do this without feeling deprived is with Asian and Indian foods.
5) I used this recipe and highly recommend it.






Curry may be the best thing EVER. I crave it. All the time. This sounds delicious. And I am way into lentils right now.
Lentils are so delicious. It was interesting all the variations of lentil curry we had in Nepal - some of it was almost pureed into a soupy liquid while others had more whole lentils. I definitely need to find more ways to incorporate lentils into our meals.
mmm...that sounds delicious! In our house, we love both curries and lentils. We throw them in just about anything but they're especially good mixed with black eyed peas. I also make lentil taco "meat" that's delicious. We had a taco party last year and a lot of the meat eaters loved it(and actually preferred it to the beef mixture we also made).
