Celery Soup Is Not Boring

At some point in my 29 years of consuming food I had decided that celery was boring. This thought was never in the forefront of my mind but apparently this subtle bias was alive and real because every time I grabbed veggies from the store or market celery never made its way into my bag. I just never considered celery as a source of sustenance or flavor - maybe because of its reputation as the food of choice for girls who don't like to eat food. Or maybe I always considered it more of a conveyance for peanut butter and ranch dressing. Or maybe it was just - dare I say - a texture thing.

So it wasn't until my friend Ashley nearly had an orgasm just describing this celery soup that she had made (using this recipe) that I decided to give it a chance.

And while this soup didn't evoke a When Harry Met Sally kind of scene at my dinner table it did prove to me that celery has got a little somethin' somethin' and is no longer to be overlooked.

Celery Soup Is Not Boring
1 can of cannellini beans (drained and rinsed)
1 can of roma tomatoes (or fresh if you can find them)
1 stock of celery, chopped
3-4 cloves of garlic, minced
1 medium / large yellow onion, chopped
2 tablespoons celery salt
Maybe some pepper
Olive oil
Parsley for garnishing


In a large soup dish, saute your chopped onions in 2 tbs of olive oil over medium heat. After a few minutes add your garlic and chopped celery. Let cook until translucent and soft.

Add your chopped roma tomatoes (with liquid) and celery salt. Let the tomatoes simmer in a little. Then add your beans and 2 cups of water or so. Let all of this simmer together for about 10 minutes. Taste for seasoning and add more salt and pepper as needed.

Serve in a bowl and top with parsley. Serves 4.

  1. For me celery was always a texture thing. So stringy and...awkward. I can handle it cooked though, so maybe I'll give this a shot!

  2. Ok. I'm going to try this. I say that hesitantly because I don't like celery. It's tolerable if cooked, but raw? The thought actually forces a physical reaction. But I like to test myself and try new things -- even if they're old things.
