A Bowl Of Awesome and A Story About Eggs

I had never had an egg any style but scrambled until college. At some point I fried an egg on a whim and fell head over heels in love with that golden, runny yolk. I would eat up to 6 fried eggs a day - no exaggeration. I became so obsessed with fried eggs they became my muse - as in I painted nothing but fried eggs for an entire semester. I remember telling my professor & class mates during a critique that these fried egg paintings were feminist commentary on fertility and politics but that was a lie. I was just obsessed with eating fried eggs.

So last night I was reminded of this egg obsession when I decided to try my hand at poaching. My friend Emily sent me a recipe involving a poached egg and told me it had changed her life. I always thought you had to have some sort of special tool or at least some special powers to poach an egg but apparently all you need is some boiling water, a splash of vinegar and a little bit of courage.

This recipe is originally dubbed the Veggie & Egg Tower of Power - but I modified the recipe just a smidge and am renaming it the Veggie & Egg Bowl of Awesome. So I pretty much followed the recipe but added cumin and cinnamon to the sweet potatoes before roasting. I also used bok choy in place of spinach because it was the only leafy green I had on hand. Oh, and I used yellow onion instead of red.

I also used Smitten Kitchen's method for egg poaching.

  1. And here I thought I was the only person who had refused all eggs but scrambled (plus frittatas, well-done omelets etc.) until adulthood. I held out a little longer than you, though, making my 1st fried egg at 27. I went so far as to phone my parents to tell them how good it was and how I excited I am to have a new type of egg to enjoy!

  6. Mine was hard boiled eggs for a while. Once I found out you can cook them without the gross green ring around the yolk. Also they are delicious, I'd boil half a dozen on Sunday and have 'breakfast to go' for the week.

  7. I can totally relate! I just discovered soft boiled eggs + soldiers, a common English breakfast. I was so in awe of the discovery that I, too, blogged about it the other day. Glad I'm not the only one talking about eggs!

  9. I had my first poached egg the first time my (now) fiance ever made breakfast for me.. They are his specialty, and I am hooked. I swear I will never eat eggs any other way than poached. (though he recently introduced me to soft boiled eggs as well). He cooks them to perfection and lays them over cinnamon raisin toast with dubliner cheese. It's completely decadent.. but SO GOOD.

  11. Eggs are the best food ever. I could easily be vegan if I weren't so obsessed. My favorite dinner is 2 poached eggs on one slice of buttered toast - the perfect yolk to bread ratio. YUM.

    And My New Roots is the best! I've made the black bean cookies, and they're pretty amazing. The only adjustments I would make would be to not use chia seeds (they didn't work very well as a binding agent) and to add a touch more sweetness. But honestly, I still ate all of them with gusto.

  13. my boyfriend would only order his eggs scrambled at restaurants because he couldn't remember the egg lingo. Now I whisper, "over medium" in his ear before he orders. :)

  14. Hey Kathleen - recently made the decision to go vegetarian and am on Day 2 of the 'no meat, no mo' plan. I've always loved eggs, but now I appreciate them even more. This sounds delish!

  15. Whoa! My New Roots looks awesome.

    I went through a *passionate* phase of black beans and sauteed zucchini topped with cilantro, salsa verde and a fried egg. Sometimes I mashed the beans and left out the zucchini, sometimes I added brown rice and lime juice. It always involved salsa verde and the fried egg though.

I'm not normally a big commenter, but I couldn't resist commenting on this post. 1) I have also gone through periods of egg-obsessiveness, and recently made the move from fried to poached (who knew eggs could have such varied stages of awesomeness??) 2)eggs over a bowl of delicious veggies seasoned with cumin is one of my top three favorite dishes and 3) I'm in complete agreement- My New Roots is so great.

  17. Yes, slutty eggs on top of everything. Tomato sauces, soups, brussel sprouts.

    I'm also having a love affair with mini sweet peppers. I've never liked peppers but I bought a bag because they were cute and kind of forced myself to eat them. Now I've been buying 3 pound bags every week.
