Food - Butternut Squash

Everytime I pass the butternut squash at the grocery store I'm intrigued but intimidated by the hard exterior of the vegetable and move along. But when Anna at Door Sixteen posted a blog about Butternut Squash I decided I had to try it.

I had no idea it was like a pumpkin (seed and guts and all) on the inside. And look at how orange it is! Here it is before cooking all scraped out with 3 cloves of garlic in each pit.

Here's the after. It's a perfect cold weather veggie. We had it with butter, salt, pepper and garlic but I think it might be good prepared like a sweet potato with salt and brown sugar.

So readers - which scary vegetable should I tackle next?

  1. I love that you put garlic in with it! I mashed my first attempt with squash all up, put some butter, nutmeg and a little bit of brown sugar. it was like pie. soooo good.
